She Crab Soup

Known for his downhome Southern cookin', barbecue and soul food, longtime local chef Mike Chestnut is no stranger to seafood, either. Enjoy his take on a classic, rich cross between a chowder and a bisque.

Ingredients
16 ounces
Crab meat
1 quart
Heavy cream
1 ounce
Crab or Seafood Base
4 ounces
Chopped Onions
4
Chopped boiled egg yolks
1 teaspoons
Mace
Splash
Sherry Wine
Instructions
Step 1
Boil Ingredients
With the exception of the crab meat, add the heavy cream and then all other ingredients into a double boiler.
Step 2
Add Crab
Bring to a low boil and then add crab meat on top.
Step 3
Add Sherry
Splash with a good quality Sherry before serving.
